5 ounces bittersweet chocolate, 65 to 70 percent cocoa solids, cut or broken into chunks
8 ounces (2 sticks) unsalted butter
3 large egg(s)
3 large egg yolk(s)
14 cup granulated sugar
3 tablespoons all-purpose flour, sifted
1 pint vanilla ice cream, or whipped cream
1 cup fresh raspberries, or other fresh berries

Step-By-Step Instruction

Step 1 - Preheating the oven & coating the ramekins: Position a rack in the center of the oven and preheat to 350°F. Spray the bottoms of 8 (4-ounce) ramekins or other round baking containers with nonstick cooking spray and place a circle of parchment paper in the bottom of each. Arrange on a baking tray. Set aside.

Step 2 - Melting the chocolate & butter: Put the chocolate and butter in a medium heatproof bowl. Set over a saucepan of gently simmering water, taking care that the bottom of the bowl does not touch the water. Stir occasionally until completely melted.

Step 3 - Mixing the batter: In the bowl of a stand mixer, using the wire whisk attachment at medium speed, beat together the eggs, egg yolks, and sugar for 3 minutes. Whisk the flour into the warm chocolate-butter mixture. Then, beating at low speed, add the chocolate mixture to the egg mixture.

Step 4 - Baking the lava cakes: Pour the batter into the ramekins. Bake for 8 to 9 minutes, rotating the baking tray 180 degrees halfway through if your oven doesn\\\\\\\'t cook evenly, until the sides look firm but the centers still seem very soft. Remove from the oven and set aside for 5 to 10 minutes.

Step 5 - Serving the lava cakes: To serve, use a heatproof pad or towel to grip a ramekin firmly and invert onto a serving plate; lift up to unmold. (If it won\\\\\\\'t unmold, use a thin knife to loosen the edge.) Peel off and discard the paper. Serve immediately, garnished with ice cream or whipped cream and fresh berries.
